Healthy Meals- Sweet Potato Gnocchi, Kale and Meat

Sweet Potato Gnocchi, Kale and Meat
(Grainfree) Sweet Potato Gnocchi
You will need:
2 medium sized sweet potatoes (not yams)
1/2 cup Tapioca Starch (flour)
1 egg yolk
Salt and Pepper
Parchment paper
How it’s done:
Cook the sweet potatoes and mash thoroughly (no lumps)
When cool, add the egg yolk, Tapioca starch, salt and pepper, and mix well.
Transfer to a Ziploc bag and pop in the fridge for at least 2 hours.
When ready to prepare, snip off a corner of the Ziploc bag (no more than 1/2”)
Squeeze on to parchment paper, press lightly with a fork and back 25-30min at 325˚F
I tossed mine in a butter garlic sauce and spiced it up with Cayenne pepper, a dash of fresh rosemary, and a pinch of paprika. DELICIOUS!!!
Kale
Sautee fresh kale in 1tbs oil (of your choice)
Season with sea salt, pepper, red pepper flakes
Squeeze juice of 1/2 lemon
Let cook for about 5 minutes
Meat
3oz (organic grass-fed beef) liver = 22g of (nutritious, good-for-you) protein
Pan seared (organic grass-fed beef) liver, lightly seasoned with salt and pepper, but you can use any protein of your choice.
When over cooked, the liver is rubbery. So only sear for about 3-4 minutes on each side.
Other than the prep time for Gnocchi, the entire meal prep time is less than 20min.
