Healthy Cookies – yes… we said it HEALTHY COOKIES! and Some Summer Nutrition Tips
Comfort Food… no matter how ‘fitness minded’ you are and how ‘disciplined’ its in our culture, our nature, our blood to enjoy a ‘comfort food’ dish once in a while. The key word being ‘once in a while’.
Rule #1: Don’t eliminate it completely – instead there is a time and place for ice cream sundaes, brownies, mac and cheese and dipping your cookies into a glass of milk. and its NOT every day, or even every other day!
Rule #2: make is a meal! If you are going to double down on an ice cream cone- make that your lunch… yep, treating your desert as an actual meal and not as an after dinner treat will help tackle the calories and keep you balanced and on track. If you are having a bowl of ice cream, treat that as you would a bowl of grilled chicken salad or pasta- a meal!
Rule #3: Leave the past in the past! if you ate it, if it happened, if you over ate it, if you crumbled at the site of a Crumbs cup cake… let it be! you can not go forward living in the past (even if it was 5 minutes ago). Holding on to a bad decision will only trigger more bad decisions. So wipe your memory clean and re-set your self and your goals.
Rule #4: In order of importance track and maintain:
Veggies – raw un-cooked, non-starchy: as many as youu want!
And now for those of you wanting a cookies recipies that wont leave you feeling guilty, our very own KB instructor Alex Z has provided her fav, fitness worthy cookie:

Almond Choco-Coco cookies
1 Cup Almond Butter
1/2 Coconut Palm sugar
1/4 C unsweetened shredded coconut*
1/2 rough chopped almond
1/4 C rough chopped bakers chocolate* (I used 60% dark Cacao Ghirardelli)
1/2 tsp Vanilla Extract
1 tsp baking soda
*optional, but definitely recommended
Mix all ingredients in a bowl
Use teaspoon to create small sized balls
Place 1/2” apart on parchment paper
Gently press down
Bake at 350˚ for 10-12 minutes
Let cool (if you can wait) and enjoy
