okay! Fennel rocks! never had it, try. Its a very unique taste and a crisp texture that adds itself very well to proteins like chicken and meat. Plus, when you pair this low calorie, super filling, good for you veggie with a heavy protein, it will help you digest your food better and get all of the nutrients you need to stay strong, lean and healthy!

Our favorite way to have funnel is to make it the focal point of a salad.
Fennel Grapefruit Salad
2-3 bulbs of funnel chopped fine in half round slices
One full grapefruit, cut in small squares or cubes
*** save all of the juices from the grapefruit for your dressing!
A tablespoon of olive oil, sea salt and pepper
Don’t fear the fennel. Its strong, aromatic presence is subdued by the bite of the citrus and the creamy avocado. As unlikely a match as these ingredients may seem, it all just works. Eat first, ask questions later. Be sure to wash the fennel thoroughly after chopping it. Dirt has a tendency to weasel its way deep into the layers.
Salad
- 2-3 fennel bulbs (chopped)
- 1 grapefruit (cubed) – save the juices here and mix into dressing!
- 1/2 avocado (diced)
- 1/2 onion (sliced thinly)
Dressing
In a separate bowl, prepare the dressing. Whisk together the lemon juice, olive oil, sea salt, and pepper until combined.
- juice of 1 lemon & grapefruit juice (left over from grapefruit)
- 1/2 tbsp. olive oil
- 1/2 tsp. sea salt – to taste
- 1/2 tsp. fresh ground black pepper – to taste
Funnel Apple Walnut Salad
Salad

- 1-2 apples, diced (green or yellow are best)
- 1/2 onion (sliced thinly)
